And then you can use a sleeve or a spoon (whichever is more comfortable) Put the quince inside the dough and start making the strips with the remaining dough. If we see that the dough is too soft, we put it in the refrigerator for a few minutes. We cut strips 1 cm wide and the length we need. We assemble the lattice and paint with egg. We have a preheated oven at 180 and we cook there for 30 minutes. It comes out of the oven and we can paint it with syrup or gel.
