COOKIE Butter 110g Sugar 135g Egg 1u Flour 0000 250g Lemon or orange zest 1u Vanilla essence to taste

FILLING Quince jam 200 g Sweet potato jam 200 g

PREPARATION
For the dough:
1. Place softened butter and sugar in a bowl. Add the egg and flavour with lemon essence and zest.
2. Add 0000 flour and knead (with a Corner or spoon) until you obtain a homogeneous dough, flatten, form a square and set aside in the fridge.

ASSEMBLY
1. Place the quince cut into cubes in a pot and melt with the addition of port or water. Mix well and place in a pastry bag.
2. Make balls of raw seed dough.
3. Place the raw seed dough on a baking sheet and make a hole to place the quince or sweet potato.
4. Bake in the oven for approximately 10 to 12 minutes at 180°C.
