Our 000 FLOUR is a high-performance flour. Its high absorption rate allows for the addition of 60% water to the flour during kneading, yielding significantly more product from the same amount of flour. The kneading time required to fully integrate the gluten is approximately 8 minutes, which reduces manufacturing time and helps bakers achieve better products in less time.
We can adjust its suitability to meet the specific needs of each customer by adding specially formulated improvers from our laboratory. These improvers optimize its performance, adapting it to various baking methods, including long fermentation (on boards) and short fermentation (direct and semi-direct).
Baked Goods - Bread Products
With our 000 FLOUR, you can achieve breads and other baked goods with high specific volume, a crispy and well-colored crust, and a uniform crumb structure that retains freshness. Excellent products can be made in all varieties: French bread, homemade bread, mignon, sandwich bread, baguettes, flutes, etc., as well as pastries, confectionery products, and pizzas.
